Thai Beef Stir Fry

Ingredients

1 ½ lbs thin sliced beef (we used bottom round)

½ cup soy sauce

¼ cup honey

¼ cup hoisin

2 Tbsp lime juice

1 Tbsp sesame oil

1 Tbsp peanut butter

1 Tbsp yellow curry powder

2 Tbsp minced garlic

2 Tbsp ginger puree

½ tsp black pepper

1 ½ cups uncooked rice

3 bell peppers, any color

1 onion

Preparation Instructions

  • Cook 1 ½ cups of rice - see rice cooking instructions
  • Wash then slice bell peppers and onion into ¼ inch thick slices. 
  • Cut beef into bite size pieces. 
  • In a bowl, combine soy sauce, honey, hoisin, lime juice, sesame oil, peanut butter, curry powder, minced garlic, ginger puree, and pepper. 
  • Add beef to the sauce mixture. 

Cooking Instructions

  • Heat a large skillet over medium-high heat. When hot, spray with cooking spray and add beef. Cook in batches if necessary to not overcrowd the pan. 
  • Cook the beef until it’s completely browned and most of the liquid has cooked out of the pan. Remove the beef from the pan and set aside. 
  • Spray the pan lightly again with cooking spray, then add the veggie mix to the pan. Cook them until they begin to soften, then add the beef back into the pan. 

For each Serving: 

  • ½ cup of rice
  • 180 g of beef and veggie mixture
