Street Corn Pasta Salad

1 rotisserie chicken OR 2 cans of chicken

16 oz penne pasta

12 oz frozen corn

Nonstick cooking spray

1 can Rotel Tomatoes (10 oz)

½ cup diced onion

¼ cup reduced fat mayo

½ cup nonfat greek yogurt

2 tsp garlic powder

2 tsp chili powder

½ tsp cumin

¼ tsp salt

¼ cup cilantro

2 Tbsp lime juice

12 Tbsp cotija cheese

Cooking Instructions

Preparation Instructions

  • Dice ½ cup of onions. 
  • Either remove all of the chicken from the rotisserie chicken OR strain 2 cans of chicken. 
  • Wash and chop cilantro. 
  • Mix together all of the ingredients for the salad except for the pasta and corn: Rotel Tomatoes, diced onion, mayo, Greek yogurt, garlic powder, chili powder, cumin, salt, cilantro, and lime juice. 
  • Heat 4 quarts of water on the stove. 

Cooking Instructions

  • Boil the penne pasta for 8-10 min or until the pasta is al dente. Rinse immediately with cold water and drain. 
  • Heat the frozen corn according to the package instructions OR heat a pan over high heat, then spray with nonstick cooking spray. Add the corn to the pan and cook until it is heated through. 
  • Add pasta and corn to a large bowl. Add the mayo mixture and chicken to the bowl as well, then toss to combine.

For each serving: 

  • 350g Pasta Salad
  • 2 Tbsp Cotija Cheese
