Smothered Sweet Pork Burrito

Ingredients

  • 1 lb pork sirloin roast
  • 1 cup root beer
  • 1 cup orange juice
  • 2 Tbsp minced garlic
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup diced onion
  • 2 Tbsp + 1 Tbsp lime juice (divided)
  • ¾ cup rice
  • 1 can black beans (15.5 oz)
  • 1 Tbsp tomato paste
  • 1 Tbsp taco seasoning
  • ½ tsp salt
  • 6 carb balance tortillas
  • 3 oz shredded cheese
  • 1 can red enchilada sauce (10 oz)

Cooking Instructions

  1. Rinse rice and black beans, then drain completely. Add the rice, black beans, tomato paste, taco seasoning, 1 Tbsp lime juice, ½ tsp salt, and ¾ cups water (if using your pressure cooker. If you are using a rice cooker, add in 1 ¼ cups of water). 
  2. When the rice is done, remove it from the pressure cooker and wash it. 
  3. Spray the pot of the pressure cooker with nonstick spray, then add the pork roast, root beer, orange juice, minced garlic, 1 tsp salt, pepper, cumin, chili powder, onion, and 2 Tbsp lime juice. 
  4. Cook on high pressure for 1 hour, then release the pressure through the pressure valve and shred the pork. 

For Each Serving:

  • Inside of tortillas, fill with 50 g pork and 75 g bean and rice mixture. 
  • Top burrito with 3 Tbsp (1 ½ oz) enchilada sauce and ½ oz cheese.
