2 lbs boneless, skinless chicken breast

1 cup + 6 oz salsa, separated

2 Tbsp Taco Seasoning (or 1 packet)

1 can Black Beans (15.5 oz can)

0.5 Tbsp Garlic Powder

1 tsp Onion Powder

1 can Corn (15 oz can)

12 Tbsp Cotija Cheese

Cooking Instructions

Instructions

  1. Add chicken, 1 cup of salsa, and 2 Tbsp of taco seasoning to a pressure cooker. 
  2. Cook on high pressure for 20 min, then release pressure. Shred the chicken then set aside. Wash the pressure cooker to be used for rice (if cooking rice in pressure cooker). 
  3. Cook rice. 
  4. Thoroughly rinse black beans, then add to a pot with spices and enough water to cover the beans. Simmer for 15 min. 
  5. Rinse and strain corn and set aside. 
  6. Separate into 6 equal portions. The following weights are approximate and will vary depending on how everything is cooked. 
  1. 105 grams shredded chicken
  2. 70 grams black beans
  3. 70 grams corn
  4. 1 oz salsa
  5. 2 Tbsp Cotija Cheese
