Pot Sticker Noodles

Ingredients

  • 2 lbs ground chicken
  • Salt & Pepper
  • ¾ cup soy sauce
  • ¼ cup water
  • 1 Tbsp rice vinegar
  • 1 Tbsp ginger paste
  • 2 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • ½ cup brown sugar
  • 2 Tbsp sriracha (optional)
  • 1 Tbsp corn starch
  • 14 oz rice noodles
  • 16 oz cole slaw mix
  • 1 cup green onions

For each serving: 

  • 450 g noodle mixture

Preparation Instructions

  • Mince 2 Tbsp garlic and 1 Tbsp ginger. 
  • Slice 1 bunch of green onions, it should make about 1 cup. 
  • In a small bowl, combine soy sauce, water, rice vinegar, ginger paste, minced garlic, sesame oil, brown sugar, and cornstarch. Whisk together to combine. 
  • Heat a pot of water (abut 4 quarts) over high heat on the stove. When the water is boiling, turn off the heat and add the rice noodles. Allow the noodles to soak for 8-9 minutes then strain. 

Cooking Instructions

  • Heat a skillet over medium high heat. When the pan is hot, spray with nonstick cooking spray. 
  • Add the ground chicken, then season with salt and pepper. Cook until all of the chicken is cooked through. 
  • Pour the sauce mixture over the chicken, be sure to mix the cornstarch up before you pour the sauce in. 
  • In a very large bowl, combine the noodles, ground chicken, green onions, and cole slaw mix.
