Ingredients

  • 2 ¼ lbs 93/7 ground beef
  • Non-stick cooking spray
  • ¼ cups ketchup
  • ⅓ cups soy sauce
  • ¼ cups pineapple juice
  • ¼ cups brown sugar
  • 2 Tbsp honey
  • 1 Tbsp sesame oil
  • 2 tsp garlic powder
  • 1 tsp ginger powder
  • 1 tsp cornstarch
  • ¼  tsp salt
  • 2 cups diced pineapple OR 1 can pineapple chunks
  • 3 bell peppers - diced large
  • 1 onion - diced large
  • 1 ½ cups rice

Cooking Instructions

  1. Cook rice- See rice cooking instructions for reference.
  2. Wash and dice 3 bell peppers into 1 inch pieces. 
  3. Peel and dice 1 onion into 1 inch pieces. 
  4. If using fresh pineapple, cut 2 cups worth of pineapple into 1 inch pieces.
  5. In a small mixing bowl, whisk together ketchup, soy sauce,  pineapple juice, brown sugar, honey, sesame oil, garlic powder, ground ginger, and cornstarch. 
  6. Heat a pan over medium heat. Once it is hot, spray with cooking spray. 
  7. Add ground beef to the pan and cook until all of the beef is browned. Once it is cooked, add sauce mixture to the ground beef and cook until the sauce is thickened.
  8. Remove the beef from the pan and set aside. 
  9. Spray the pan with non-stick spray again, and add bell peppers, diced onion, and pineapple chunks into the pan. Season with salt.  
  10. Allow the mixture to cook for 1-2 minutes without stirring, or until the pineapple begins to caramelize. Stir then repeat process until your vegetables are slightly tender or until they reach your desired level of doneness. 

For each serving:

  • ½ cup rice
  • 160 g Ground beef
  • 90 g Bell pepper mixture
