  • 2 lbs boneless skinless chicken breasts
  • 1 Tbsp brown sugar
  • 1 Tbsp + 1 Tbsp olive oil (divided)
  • 1 tsp onion powder
  • 3 bell peppers - any mix of colors you'd like
  • 1 tsp garlic powder
  • ½ tsp cumin
  • 1 onion
  • 12 Fajita Tortillas
  • 1 Tbsp chili powder
  • 1 tsp salt
  • 3 oz shredded fiesta style cheese
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 6 tbsp fat free greek yogurt

Cooking Instructions

  1. PREHEAT YOUR OVEN TO 375 F.
  2. MIX ALL SPICES TOGETHER - CHILI POWDER, SALT, PAPRIKA, OREGANO, BROWN SUGAR, ONION POWDER, GARLIC POWDER, AND CUMIN.
  3. WASH AND SLICE BELL PEPPERS INTO STRIPS, THEN PEEL THE ONION AND SLICE INTO STRIPS.
  4. TRIM, THEN WEIGH AND FILET THE CHICKEN BREASTS.
  5. ADD 1 TBSP OF OLIVE OIL TO THE VEGETABLES AND 1 TBSP OF OLIVE OIL TO THE CHICKEN BREASTS.
  6. SPLIT THE SPICE MIX INTO TWO EQUAL PORTIONS, THEN PUT HALF ON THE SLICED VEGETABLES AND HALF ON THE
    CHICKEN.
  7. LAY THE VEGETABLES OUT ON A RIMMED BAKING SHEET THAT IS LINED WITH PARCHMENT PAPER OR SPRAYED WITH COOKING SPRAY.
  8. LAYER THE CHICKEN OVER THE TOP OF THE VEGETABLES AND BAKE FOR 30-40 MINUTES, OR UNTIL THE CHICKEN IS COOKED THROUGH AND THE INTERNAL TEMPERATURE IS 165 F. BE CAREFUL WHEN REMOVING IT FROM THE OVEN, THERE WILL BE SOME LIQUID IN THE PAN.
  9. WHEN THE CHICKEN IS DONE, LET REST FOR AT LEAST 3 MINUTES THEN SLICE.
  10. TIP: IF YOU AREN'T EATING THESE FAJITAS IMMEDIATELY, WRAP TORTILLAS IN SETS OF 2 IN EITHER ALUMINUM FOIL OR PARCHMENT PAPER TO PREVENT THEM FROM GETTING SOGGY IN MEAL PREP CONTAINERS.
