  • 2 lbs 93/7 ground beef 
  • 1 ½ cups chicken broth
  • 3 Tbsp taco seasoning
  • 1 cup onion, diced
  • 2 Tbsp garlic, minced
  • 1 ½ cups uncooked rice
  • 10 oz Rotel tomatoes
  • 1 can black beans (15.5 oz)
  • 3 oz fiesta blend shredded cheese

Preparation Instructions

  • Mince garlic and dice onion, then set aside for now. 
  • Rinse black beans and 1 ½ cups of rice, then set aside. 
  • Heat the pot of your pressure cooker to saute on high heat. When it is hot, spray with nonstick cooking spray.

  • Add onions and saute for 5 min. 
  • Add garlic and saute for an additional 30 seconds. 
  • Add ground beef to the pot and cook until there is no more pink. Drain any excess fat. 
  • Add taco seasoning, rotel tomatoes, chicken broth, rice, and black beans to the pot, then stir to combine. 
  • Seal the pressure cooker then set to cook on high pressure for 3 min, then allow the pressure to naturally release for an additional 5 min. 
  • Release the rest of the pressure through the pressure valve then fluff the rice. 
  • Add 3 oz fiesta blend cheese, then fold into the rice mixture and enjoy!
